1. Prepare Dry Ingredients
In a medium bowl, whisk together all-purpose flour, granulated sugar, baking powder, garlic powder, fine sea salt, and paprika until well combined.
2. Incorporate Butter and Cheese
Cut the cold unsalted butter into the dry mix until the butter is pea-sized. Then, add 1.5 cups of grated sharp or extra-sharp Cheddar cheese and mix until evenly distributed.
3. Mix Wet Ingredients
In a small bowl, whisk together buttermilk and egg. Pour this mixture into the dry ingredients and fold in with a wooden spoon just until combined.
4. Bake the Biscuits
Scoop dough into 12 portions on the prepared baking sheets. Brush each biscuit with melted butter and sprinkle with remaining Cheddar cheese. Bake for 15 minutes, then brush with more butter, rotate pans, and bake for an additional 5 to 10 minutes until golden brown.
