How to Make Short Ribs with Amba–Passion Fruit Glaze

1. Season the Ribs

Mix together salt, ground cumin, onion powder, garlic powder, and ground black pepper. Rub the spice blend over the beef short ribs, cover in plastic wrap, and refrigerate overnight.

2. Cook the Ribs

Preheat the oven to 275ºF. Place the ribs in a pot and pour a mixture of ketchup, water, amba, brown sugar, and passion fruit puree over them. Cook in the oven for 5-6 hours until tender.

3. Chill and Skim Fat

Allow the cooked ribs to cool, then refrigerate overnight. The next day, skim off any hardened fat from the surface.

4. Reheat and Serve

Preheat the oven to 350ºF and reheat the ribs for 20-25 minutes. Finish by broiling until the glaze caramelizes, then serve hot.
