    How to Make Banana & Toasted Walnut Muffins

    1. Preheat Oven and Prepare Muffin Tin

    Adjust your oven rack to the middle position and preheat the oven to 425°F. Grease a 12-cup muffin tin thoroughly.

    2. Prepare Dry Ingredients

    In a medium bowl, whisk together the bread flour, baking powder, baking soda, and table salt.

    3. Combine Wet Ingredients

    In a large bowl, combine the mashed bananas, ¾ cup of sugar, eggs, vegetable oil, and vanilla extract. Whisk until smooth and fully combined.

    4. Combine Wet and Dry Ingredients

    Gradually add the flour mixture to the wet ingredients, whisking until just combined. Stir in the chopped toasted walnuts.

    5. Fill Muffin Cups

    Using a portion scoop or a large spoon, divide the batter evenly among the prepared muffin cups. Each cup should be filled almost to the top.

    6. Add Sugar Topping

    Sprinkle the tops of the muffins with the remaining 2 tablespoons of sugar.

    7. Bake Muffins

    Place the muffin tin in the oven and bake for 14 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

    8. Cool Muffins

    Let the muffins cool in the tin on a wire rack for about 10 minutes. After 10 minutes, transfer the muffins from the tin to the wire rack to cool for at least another 5 minutes.
