How to Make Spiced Raisin Scones

1. Mix the Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, 2 tablespoons of granulated sugar, sea salt, ground cinnamon, freshly grated nutmeg, and ground ginger until well combined.

2. Incorporate the Butter

Add the chilled, cubed butter to the dry ingredients. Using a pastry blender or your fingertips, work the butter into the flour mixture until it resembles sandy crumbs.

3. Combine with Cream and Raisins

Gently stir in 1 cup of heavy whipping cream and golden raisins until just combined. Be careful not to overmix.

4. Fold and Shape the Dough

Turn the dough onto a lightly floured work surface and shape it into a rectangle. Fold the dough in thirds like a letter, then turn it 90 degrees. Repeat this folding and turning process three times.

5. Form and Cut

Shape the dough into an 8-inch circle. Using a sharp knife or dough cutter, slice the circle into 8 equal triangles.

6. Brush and Sprinkle

Transfer the triangles onto a parchment-lined baking sheet. Brush the tops with 2 tablespoons of heavy cream and sprinkle with the remaining 2 tablespoons of sugar.

7. Chill Before Baking

Place the scones in the freezer for 15 minutes. Chilling the scones before baking helps them maintain their shape and enhances their flakiness.

8. Bake to Perfection

Preheat your oven to 400°F (200°C). Once preheated, bake the scones for 15 to 18 minutes, or until they are golden brown on top.

9. Serve Fresh

These spiced raisin scones are best enjoyed fresh from the oven. If you'd like to prepare them ahead of time, the dough can be frozen for up to 3 months. Simply bake straight from the freezer, adding a few extra minutes to the baking time.
