How to Make Chocolate Chip Cookies with Salted Walnut Brittle

    1. Preheat the Oven

Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper to prepare them for the cookies later.

    2. Make the Walnut Brittle

In a skillet, cook ⅔ cup of granulated sugar over medium heat. Let the sugar sit without stirring for about 3½ to 4 minutes, allowing it to melt evenly. You'll know it's ready when it turns a copper color and just begins to smoke, indicating perfect caramelization. Stir in the chopped walnuts quickly, along with ¼ teaspoon of flaky salt, and spread the mixture onto a baking sheet. Pop this in the freezer for 10 to 15 minutes to let it set and become brittle.

    3. Prepare the Cookie Dough

As the brittle is setting, use an electric mixer to beat together the unsalted butter, ⅓ cup granulated sugar, and light-brown sugar until creamy. Add the egg and vanilla extract, mixing until well combined. Gradually incorporate the dry ingredients: ¾ teaspoon flaky salt, baking soda, baking powder, and all-purpose flour, mixing until the dough just comes together.

    4. Combine and Shape the Cookies

Once the brittle has hardened, take it out of the freezer and smash it into small pieces. Gently fold the brittle pieces and chocolate chips into the cookie dough using your hands or a mixing utensil, ensuring they are evenly distributed throughout.

    5. Bake the Cookies

Scoop out portions of the dough onto the prepared baking sheets, leaving enough space between each cookie. Bake in the preheated oven for 10 to 12 minutes, or until the edges turn a golden brown. This is your cue that the cookies are perfectly baked, with a delightful crisp edge and a chewy center. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy the rich flavors of chocolate and the delightful crunch of salted walnut brittle in every bite!
