How to Make Chicken and Herb Lettuce Wraps with Crispy Shallots and Peanuts

1. Fry Shallots

Heat the olive oil in a saucepan over medium heat, then add the thinly sliced shallot and cook for about 5 to 7 minutes until golden brown and crispy. Transfer the crispy shallots to a plate lined with a towel or paper towel, leaving the oil in the pan.

2. Prepare Dressing

In a bowl, whisk together the rice vinegar, soy sauce, miso paste, tahini, honey, minced ginger, and a pinch of sea salt with the reserved shallot oil until smooth and fully combined.

3. Dress Chicken

Place the shredded or cubed chicken in a mixing bowl and pour half of the prepared dressing over it. Toss well to ensure the chicken is evenly coated.

4. Assemble Wraps

Arrange butter lettuce leaves on a platter, spoon dressed chicken onto each leaf, and sprinkle with chopped fresh herbs. Add slices of radish and avocado, scatter chopped peanuts, and finish with the crispy shallots. Drizzle with the remaining dressing before serving.
