1. Prepare Spices
Start by lightly crushing the cumin and coriander seeds using a mortar and pestle.
2. Make Batter
In a large bowl, whisk together the flour, baking powder, salt, and the crushed spices. In a separate bowl, whisk the milk, egg, lime juice, and Tabasco sauce until well combined. Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter. Allow the batter to rest for 10 to 30 minutes.
3. Prepare Onions
Meanwhile, peel and slice the onion lengthwise into 1/4-inch-thick slices.
4. Fry Fritters
In a large pot, heat the oil to 375°F. Carefully drop tablespoon-sized portions of the battered onion into the hot oil. Fry them for about 2 to 3 minutes per batch, turning occasionally, until they are golden and crispy all over.
5. Serve
Once fried, remove the fritters with a slotted spoon and drain them on a paper towel-lined plate. Sprinkle the hot fritters with a pinch of kosher salt. Serve the crispy onion fritters immediately with lime wedges and hot sauce on the side, if desired.
