1. Steam the Broccoli
Fill a large saucepan with about an inch of water and place a steamer basket inside. Bring the water to a boil over medium heat, then add in your broccoli florets. Steam the broccoli for about 5 minutes, until they become tender and turn a bright green.
2. Process the Broccoli
Once the broccoli is steamed, transfer it to a food processor and pulse until it’s chopped into small pieces.
3. Combine Ingredients
Add the shredded cheddar cheese, eggs, coconut flour, salt, black pepper, and garlic powder to the food processor. Pulse again until everything is well combined into a smooth mixture.
4. Preheat the Oven
Preheat your oven to 350°F. Line a large rimmed baking sheet with parchment paper and lightly grease it.
5. Form and Bake the Bites
Using your hands, roll the broccoli mixture into 1-inch balls and place them on the prepared baking sheet. Bake the bites in the preheated oven for 20 to 25 minutes until they turn golden brown and are firm to the touch.
6. Cool and Serve
