1. Prepare the Beans
Heat the vegetable oil in a medium skillet over medium heat. Add in the finely chopped garlic cloves and stir them gently for about a minute until they're aromatic, being careful not to let them brown. Introduce the black beans to the skillet and begin mashing them with the back of a spoon as they cook. Continue this process for around 10 minutes until the beans thicken up and can hold their shape on a spoon.
2. Prepare the Toppings
While the beans are cooking, prepare your toppings. Slice the heart of romaine and mix it in a large bowl with sour cream and Mexican hot sauce for a refreshing and tangy topping.
3. Assemble the Tostadas
Lay out 12 tostadas on serving plates. Spread a generous layer of the mashed beans over each tostada. Then add your choice of protein, the romaine mixture, and if you like, some diced avocado. Sprinkle each tostada with grated cheese and finish with a good handful of chopped cilantro to brighten up the flavors.
