    How to Make Crispy Pork and Vegetable Air-Fryer Egg Rolls

    1. Brown the Pork

    In a 12-inch nonstick skillet over medium-high heat, cook the ground pork until no longer pink, roughly 5 minutes, breaking it up with a spoon.

    2. Aromatics

    Add the sliced scallion whites, minced garlic, and grated ginger. Cook until fragrant, about 1 minute.

    Include the coleslaw mix, chopped mushrooms, soy sauce, sugar, and vinegar. Cook until the cabbage has softened slightly, approximately 3 minutes.

    4. Finish the Filling

    Remove the skillet from the heat. Stir in the toasted sesame oil and scallion greens. Transfer the pork mixture to a large plate, spread it into an even layer, and let it cool in the refrigerator for about 5 minutes.

    5. Assemble the Egg Rolls

    Lay an egg roll wrapper on the counter with one corner pointing towards you. Place a lightly packed ⅓ cup of the filling on the lower half of the wrapper, shaping it into a cylindrical form with your fingers. Moisten the wrapper's edges with water. Fold the bottom corner over the filling, pressing down. Fold the side corners in and press to seal. Roll up the wrapper tightly, leaving the seam side down, and cover with a damp towel while you repeat with the remaining wrappers.
