1. Preheat Oven
Preheat your oven to 425°F (220°C/gas 7).
2. Prepare Cauliflower
Place the cauliflower florets in a large bowl. Drizzle with extra-virgin olive oil, sprinkle with fresh thyme, kosher salt, and freshly ground black pepper. Toss until evenly coated.
3. Roast Cauliflower
Spread the seasoned cauliflower florets out on one or two large rimmed baking sheets in a single layer. Roast for at least 20 minutes, or until tender and golden brown.
4. Serve
Transfer the roasted cauliflower to a warmed serving bowl. Drizzle with Sauce Vierge. Serve warm or at room temperature.
