A simple yet flavorful side dish made with chard, garlic, lemon, and chile flakes.
Chard, washed, leaves stripped from stems, cut into 2-inch pieces

1. Prepare the Chard
Wash the chard thoroughly under cool water to remove any grit. Once clean, strip the leaves from the stems and cut them into 2-inch pieces.
2. Cook the Chard
Heat a sauté pan or skillet over medium-high heat and add 1 tablespoon of olive oil. Let it heat up for a minute or two. When the oil is shimmering, add the chopped chard to the pan. Sprinkle with a pinch of salt and cook, stirring often, until the chard is tender and wilted, about 5 minutes.
3. Cool and Squeeze
Remove the chard from the pan and let it cool for a few minutes in a bowl. When it's cool enough to handle, squeeze out any excess moisture with your hands.
4. Dress the Chard
Dress the chard with the remaining tablespoon of olive oil, the finely chopped garlic, a generous squeeze of lemon juice, and a pinch of dried chile flakes. Toss everything together to ensure the flavors are well distributed. Taste and adjust the seasoning with additional salt if needed.
