A simple yet delicious roasted garlic recipe, perfect for creating a rich, caramelized flavor. Serve on toasted bread with goat cheese and olives.
1. Preheat Oven
Preheat your oven to 375°F to ensure even roasting and develop a rich, caramelized flavor.
2. Prepare Garlic
Gently remove only the dry outer layers of fresh heads of garlic, leaving the cloves attached to keep them intact and allow heat to penetrate.
3. Arrange Garlic in Dish
Arrange the garlic heads snugly, root side down, in an earthenware baking dish or heavy ovenproof pan.
4. Add Liquid and Season
Pour chicken broth or water into the dish to reach about ¼ inch depth, drizzle the garlic with olive oil, sprinkle with a pinch of salt, and scatter thyme, savory, and peppercorns over the garlic.
5. Cover and Bake
Cover the dish tightly with a lid or foil and place it in your preheated oven. Bake for about 20 minutes.
6. Uncover and Roast
After 20 minutes, uncover the dish and continue roasting for another 7 minutes to allow the garlic to develop a golden color and slightly crisp texture.
7. Serve Roasted Garlic
Take the dish out of the oven and serve the roasted garlic immediately, squeezing the soft cloves onto toasted bread. Pair it with goat cheese and olives for a delicious appetizer.
Start with fresh, large, and firm bulbs of garlic. Smaller or older bulbs may not roast as evenly or produce as much creamy garlic paste.
Cook the garlic at around 375°F (190°C) to allow for slow caramelization and prevent burning.
Drizzle a high-quality olive oil over the cut surface of the garlic and sprinkle with sea salt to enhance sweetness and moisture drawing.
Cut the top third of the garlic bulb to expose the cloves, ensuring you trim just enough to reveal the tops without losing too much of the clove itself.
After about 45 minutes, check for a golden-brown color and soft texture, adjusting time based on bulb size and oven.
