1. Preheat Oven and Prepare Ingredients
Preheat your oven to 425°F. Slice half a lemon and prepare four garlic cloves. Wash and trim two bunches of broccolini and place them on a baking sheet.
2. Season and Oil Broccolini
Drizzle the broccolini with two tablespoons of olive oil, ensuring each piece is well-coated. Sprinkle with kosher salt and freshly ground black pepper to taste.
3. Add Parmesan and Roast
Spread half a cup of finely grated Parmesan over the broccolini. Roast in the preheated oven for 10 to 15 minutes, until bright green with tips starting to char.
4. Finish with Lemon Juice
Once roasted, remove the broccolini from the oven and squeeze the juice of the remaining half lemon over the hot vegetables. Serve immediately.
