How to Make Brussels Sprouts with Mustard

1. Preheat Broiler

Preheat your broiler to a high setting, ready for cooking the Brussels sprouts.

2. Prepare Brussels Sprouts

Rinse the Brussels sprouts, trim off any tough ends, and slice them in half.

3. Cook Pancetta

In a 10-inch sauté pan over medium heat, cook the diced pancetta for about 5 minutes until crispy.

4. Mix Pancetta and Brussels Sprouts

Transfer the cooked pancetta and its fat to a large bowl. Add the prepared Brussels sprouts and a pinch of flaky sea salt, tossing to coat.

5. Broil Brussels Sprouts

Spread the mixture evenly on a baking sheet and broil for 15 to 18 minutes until the Brussels sprouts are lightly browned and tender.

6. Season with Mustard and Lemon

Return the broiled Brussels sprouts to the large bowl. Add mustard seeds, lemon zest and juice, and mustard oil. Toss to combine.
