1. Preheat the Skillet
Begin by preheating a large, lidded skillet over medium heat until it's hot. This step ensures that the seitan cooks quickly and evenly.
2. Cook Seitan
Pour in the olive oil and give it a moment to heat up before adding the seitan. Sauté the seitan for about 2 minutes, allowing it to brown slightly, which adds a nice texture and depth of flavor.
3. Add Onion
Add the sliced onion to the skillet. Sauté the onion for around 5 minutes, covering the pan to help retain moisture, which softens the onions faster.
4. Add Mushrooms and Seasonings
Once the onions are softened, stir in the mushrooms, garlic, thyme, basil, salt, and a few pinches of freshly ground black pepper. Continue to cook for about 8 minutes, until the mushrooms release their juices and everything becomes fragrant.
5. Deglaze with Wine and Broth
Pour in the white wine and vegetable broth, stirring well to combine. Allow the mixture to simmer for a few minutes.
6. Add Spinach
Add the spinach in batches, using tongs to mix it into the hot skillet. The spinach will wilt down quickly, making room for more. This process should take about 5 minutes.
7. Serve
Transfer the Seitan and Mushroom Medley with Spinach to a serving dish and, if desired, garnish with lemon slices. Serve immediately and enjoy!
