1. Prepare and Bake Sweet Potatoes
Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the sweet potato sticks with olive oil, 1¼ teaspoons of kosher salt, garlic powder, ground coriander, cumin, cayenne, and your choice of cardamom or cinnamon. Spread the seasoned sweet potatoes out in a single layer on the baking sheet and roast for 15 minutes. Flip each fry and continue to roast for another 10 minutes, then flip again and roast for an additional 5 minutes or until they are crisp.
2. Prepare Harissa Yogurt Sauce
While the sweet potatoes are roasting, prepare the Harissa Yogurt Sauce by combining Greek-style yogurt, white vinegar, ½ teaspoon of kosher salt, minced garlic, and harissa in a mixing bowl. Stir well and swirl the harissa to create a marbled effect.
3. Serve
Serve the Spiced Sweet Potato Oven Fries hot with the Harissa Yogurt Sauce on the side.
