1. Prepare Broccoli Noodles
Begin by washing and trimming the broccoli stalks. Use a spiral vegetable slicer to create thin, noodle-like strips from the broccoli stems.
2. Heat Coconut Oil and Garlic
Heat 3 tablespoons of coconut oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the minced garlic and cook for about 30 seconds until it becomes fragrant.
3. Cook Shrimp
Add the shrimp to the skillet and stir-fry them for 2-3 minutes until they turn pink and opaque.
4. Cook Eggs
Push the shrimp to one side of the skillet and crack the eggs into the empty space. Stir them gently until they just start to set, then mix everything together.
5. Add Tomatoes and Sauce Ingredients
Add the chopped tomatoes, fish sauce, coconut aminos, chopped chile, and grated lime zest to the skillet. Stir well to combine all the flavors.
6. Add Broccoli Noodles
Stir in the prepared broccoli stem noodles. Cook for about 2 minutes, allowing the noodles to absorb the sauce and heat through.
7. Add Fresh Basil
Turn off the heat and stir in the chopped fresh basil.
8. Serve
Serve the Pad Thai with lime wedges on the side.

Serve with a garnish of fresh bean sprouts, crushed peanuts, cilantro, and green onions. These add freshness, crunch, and an extra layer of flavor.
For the shrimp, cook until they are just opaque and pink. Overcooking will make them rubbery. Set them aside and add them back in at the end to prevent overcooking.
