    How to Make Savory Ginger Chicken & Broccoli Stir-Fry with Brown Rice

    1. Prep the Broccoli

    Boil water in a kettle. Place broccoli in a medium saucepan ready to cook. Once water is boiled, pour over the broccoli and boil for 4 minutes.

    2. Aromatic Base

    In a non-stick wok, heat olive oil over medium heat. Add shredded ginger, garlic, and sliced onion. Stir-fry for 2 minutes, then sprinkle in mild chili powder and stir to combine.

    3. Chicken Stir-fry

    Increase the heat to high. Add diced chicken to the wok and stir-fry for an additional 2 minutes.

    4. Broccoli Infusion

    Drain the broccoli, reserving 4 tablespoons of the cooking water. Add the broccoli, reserved water, soy sauce, honey, and cubed red pepper to the wok. Stir well and cook until everything is heated through.

    5. Rice and Serve

    While stir-fry cooks, heat the brown rice following the package instructions. Serve the stir-fry atop the warm brown rice.
