How to Make Creamy Chickpea Breakfast Soup

1. Prepare Chickpea Mixture

Combine the chickpea flour, salt, and 2 cups of water in a medium bowl. Whisk them together until the mixture is smooth and free of lumps. If you find any stubborn lumps, pass the mixture through a sieve to ensure a silky texture.

2. Cook Chickpea Mixture

Bring 6 cups of water to a boil in a wide, heavy pot. Once boiling, gradually whisk in the chickpea mixture, stirring continuously with a wooden spoon to prevent lumps and help the mixture foam initially. After foaming subsides, lower the heat and continue cooking for about 5 minutes, stirring constantly until thickened. Reduce the heat further and stir for another couple of minutes to ensure the soup is uniformly smooth.

3. Reheat if Necessary

If you’re not serving the soup immediately, cover the pot to prevent a skin from forming on the surface. When it’s time to serve, reheat the soup gently over medium heat, adding a little water if necessary to achieve your desired consistency, and whisk until smooth.

4. Cook Noodles (Optional)

If you’d like to include noodles, cook them according to their type. Fresh noodles will only need about 1-2 minutes in boiling water, while dried noodles will take around 5 minutes. Drain the noodles once cooked and set them aside.

5. Prepare Toppings and Condiments

Prepare your choice of toppings and condiments, such as chopped roasted peanuts, shallot or garlic oil, palm sugar water, red chile oil, tart-sweet chile-garlic sauce, chopped blanched pea tendrils, and tender lettuce greens.

6. Serve Soup

To serve, ladle the creamy chickpea soup into bowls, adding the cooked noodles if using, and sprinkle with chopped coriander. Allow your guests to customize their bowls with the various toppings and condiments, adding a personal touch to their breakfast soup. Enjoy the warm, comforting flavors of this nourishing dish.

Pitfalls and tips

Broth Matters

Use a high-quality, preferably homemade, vegetable or chicken broth as the backbone of your soup's flavor.

Quality of Chickpeas

Opt for dried chickpeas soaked overnight and cooked until tender for better flavor and texture, or rinse well if using canned.

Blending for Creaminess

Use a high-powered blender or immersion blender to blend the soup well, achieving a velvety consistency.

Sautéing Aromatics

Cook onions, garlic, and other aromatics until translucent and fragrant, with a pinch of salt to draw out moisture and sweetness.

Spice Toasting

Toast spices like cumin or coriander before adding liquids to deepen flavors and release oils.
