1. Prepare Chickpea Mixture
Combine the chickpea flour, salt, and 2 cups of water in a medium bowl. Whisk them together until the mixture is smooth and free of lumps. If you find any stubborn lumps, pass the mixture through a sieve to ensure a silky texture.
2. Cook Chickpea Mixture
Bring 6 cups of water to a boil in a wide, heavy pot. Once boiling, gradually whisk in the chickpea mixture, stirring continuously with a wooden spoon to prevent lumps and help the mixture foam initially. After foaming subsides, lower the heat and continue cooking for about 5 minutes, stirring constantly until thickened. 3. Reheat if Necessary

Prepare your choice of toppings and condiments, such as chopped roasted peanuts, shallot or garlic oil, palm sugar water, red chile oil, tart-sweet chile-garlic sauce, chopped blanched pea tendrils, and tender lettuce greens.
6. Serve Soup
