    How to Make Savory Shrimp & Sugar Ham Fried Rice

    1. Clean and Drain Shrimp

    Start by cleaning the shrimp thoroughly, then drain them and pat them dry. Once dry, cut the shrimp as desired and let them drain for about 20 minutes.

    2. Prepare Marinade

    While the shrimp are draining, mix together the marinade ingredients: oyster sauce, sesame oil, light soy sauce, ginger juice mixed with white rice wine, sugar, and a pinch of white pepper. Coat the shrimp with this marinade and set aside to let the flavors meld.

    3. Prepare Sauce

    Next, prepare the sauce by mixing oyster sauce, light soy sauce, white rice wine, sesame oil, sugar, and a pinch of white pepper in a small bowl. Set this aside; it will be used later to bring everything together.

    4. Break Up Rice

    Break up any lumps in the cooked rice so it’s ready to stir-fry. This step ensures each grain gets evenly coated with the delicious flavors later on.

    5. Scramble Eggs

    Heat your wok on high for about 30 seconds before adding 1.5 tablespoons of peanut oil. Once the oil shimmers, pour in the beaten eggs. Scramble them quickly for about 1.5 minutes until they are medium firm. Transfer the eggs to a plate and cut them into smaller pieces.

    6. Cook Shrimp and Ham

    Wash the wok and heat it again. Add 2.5 tablespoons of peanut oil, then cook the marinated shrimp for about 2 minutes until they start to turn pink. Add the diced Sugar Ham and stir-fry for another minute.

    7. Stir-Fry Rice

    Now, it’s time to add the rice. Stir-fry the rice for 4-5 minutes, ensuring each grain is evenly coated with oil and starts to take on a light golden color.

    8. Add Sauce

    Raise the heat to high and pour in the sauce mixture, stirring continuously for about 1 minute. Lower the heat to medium and continue to stir-fry until every grain of rice is beautifully coated with the sauce, which should take another 2 minutes.

    9. Combine Eggs and Scallions

    Finally, add the scrambled eggs back into the wok, stirring for an additional 2 minutes to mix them evenly with the rice. Toss in the finely sliced scallions and stir-fry for another minute to let their flavor infuse into the dish.

    10. Serve

    Transfer the savory shrimp and sugar ham fried rice to a serving plate and serve hot. Enjoy your meal!
