1. Cook Pasta
Bring a large pot of salted water to a boil and cook the pasta until al dente, then drain, reserving ½ cup of the pasta water.
2. Cook Squid
Heat olive oil in a large skillet over medium-high heat, add half of the cleaned squid, season with kosher salt and black pepper, cook until browned and crispy, then transfer to a plate. Repeat with remaining squid.
3. Caramelize Garlic and Lemons
Add olive oil to the skillet, then cook the garlic and lemon slices until golden and caramelized.
4. Combine Squid, Chile, and Pasta
Return cooked squid to the skillet, add sliced chile, cooked pasta, and reserved pasta water, season with salt and pepper, and simmer to create a light sauce.
5. Garnish and Serve
Serve the pasta immediately, garnished with a mixture of fresh herbs like dill, cilantro, basil, and mint.
