How to Make Grilled Clams with Lemon-Cayenne-Garlic Butter

1. Preheat Grill and Melt Butter

Start by preheating your grill to a high temperature. While the grill is heating, take a small saucepan and melt 1/4 cup of unsalted butter over low heat.

2. Add Garlic and Cayenne

Once the butter is fully melted, add two cloves of minced garlic and 1/4 teaspoon of cayenne pepper to the saucepan. Cook this mixture for about a minute, stirring gently.

3. Stir in Lemon Juice

Next, stir in the juice of one lemon into the butter mixture.

4. Grill Clams

Place the clams directly on the grill and cook until the shells pop open, which should take just a few minutes. Use tongs to remove them as soon as they're perfectly cooked.

5. Serve with Lemon-Cayenne-Garlic Butter

Transfer the grilled clams to a serving bowl, and pour the lemon-cayenne-garlic butter evenly over them. Sprinkle chopped chives over the top.
