How to Make Golden Parmesan-Crusted Fish Bites

1. Preheat Oven

Preheat your oven to 425°F. Pour the avocado oil onto a large rimmed baking sheet and place it in the oven until the oil starts to shimmer.

2. Prepare Coating Mixture

Whisk together the crushed pork rinds, grated Parmesan cheese, chili powder, salt, black pepper, and garlic powder in a medium shallow bowl.

3. Prepare Egg Wash

In another bowl, whisk together the egg and water to prepare the egg wash.

4. Coat Fish Pieces

Dip each piece of mahi mahi into the egg mixture, making sure it's well-coated. Then, dredge the pieces in the pork rind mixture, pressing gently to ensure the coating adheres well.

5. Bake Fish Bites

Carefully remove the hot baking sheet from the oven and give the oil a quick swirl to ensure it's evenly distributed. Place the coated fish pieces on the baking sheet in a single layer. Bake for 5 minutes, flip each piece, and bake for another 5 minutes until the fish flakes easily with a fork.
