1. Prepare Chipotle Tomato Blend
In a blender or food processor, combine the drained diced tomatoes with the chipotle chiles en adobo and a tablespoon of the canning sauce. Blend until smooth.
2. Sauté Garlic
In a 12-inch skillet, heat the vegetable oil over medium heat. Add the finely chopped or crushed garlic cloves, cooking until fragrant, about a minute.
3. Cook Tomato Chipotle Sauce
Pour the blended tomato and chipotle mixture into the skillet with the garlic. Stir and let it cook for about 5 minutes until the sauce is bubbling and aromatic.
4. Adjust Sauce Consistency
Add fish or chicken broth to the sauce, adjusting the consistency as needed. Season with salt to taste.
5. Cook Shrimp
Add the peeled and deveined shrimp to the sauce, cooking for about 4 minutes until they turn pink and opaque.
6. Garnish and Serve
Plate the shrimp and sauce, garnishing with roughly chopped cilantro before serving.
Shrimp cook very quickly. As soon as they turn pink and opaque, remove them from the heat. Typically, 2-3 minutes per side is sufficient depending on their size.
Start with fresh, high-quality shrimp. Look for wild-caught if possible, and opt for shrimp that are fresh or thawed properly. Size is subjective, but medium to large shrimp allows for a nice bite and presentation.
Cook the shrimp in a hot pan in batches to avoid overcrowding, ensuring a beautiful sear on each shrimp. This caramelization adds both texture and flavor complexity. Use a neutral high-smoke-point oil such as canola or grapeseed to achieve a good sear without burning.
Thoroughly clean and devein the shrimp. This not only improves the texture but also enhances the flavor. If the shrimp are frozen, ensure they are completely thawed and patted dry before cooking.
Chipotle can be quite intense. Balance its heat with acid (like lime juice) and sweetness (honey or a bit of brown sugar) in the marinade. Allow the shrimp to marinate for at least 30 minutes but no more than 1 hour to avoid overbearing flavors and mushy texture.
