1. Preheat Oven
Start by preheating your oven to 450 degrees Fahrenheit.
2. Prepare Ingredients
Score the sausages lightly with a knife. Trim and halve the brussels sprouts lengthwise, and cut the small potatoes in half.
3. Combine Ingredients
In a large bowl, combine the sausages, brussels sprouts, and potatoes. Drizzle with 2 tablespoons of extra-virgin olive oil, then season with kosher salt and black pepper. Toss until well coated. Add more olive oil if needed.
4. Arrange on Baking Sheet
Spread the coated sausages and vegetables out in a single layer on a baking sheet, with the brussels sprouts and potatoes cut-side down. Roast for about 15 minutes.
5. Prepare Honey-Mustard Glaze
In a small bowl, stir together the honey, Dijon mustard, and mustard seeds if using.
6. Apply Glaze
After 15 minutes of roasting, remove the baking sheet from the oven. Drizzle the honey-mustard glaze over the sausage and vegetables, then toss to coat evenly. Flip the sausages. Sprinkle almonds or walnuts if using.
7. Continue Roasting
Return the baking sheet to the oven and roast for another 10 minutes, until sausages are fully cooked and vegetables are golden and tender.
8. Season and Serve
Taste and season with additional salt and pepper if needed. Transfer to a serving dish and enjoy.
