How to Make Honey-Glazed Balsamic Sausages with Roasted Red Vegetables

1. Preheat and Prep

Preheat your oven to 200°C (180°C fan/gas mark 6). In a large roasting tin, combine the onion wedges and pepper quarters.

2. Season and Roast Vegetables

Drizzle the olive oil and balsamic vinegar over the prepared vegetables. Season generously with salt and pepper, then toss to coat evenly. Place the tin in the oven and roast for 10 minutes.

3. Add Sausages and Tomatoes

Carefully remove the tin from the oven. Arrange the sausages and cherry tomatoes among the partially roasted vegetables. If desired, scatter a few thyme sprigs over the top for added flavor. Drizzle the honey evenly over the sausages and vegetables.

4. Finish Roasting

Return the tin to the oven and continue to roast for an additional 25 minutes. Midway through, turn the sausages to ensure even cooking. Roast until the sausages are fully cooked and the vegetables are tender, golden, and sticky.

5. Serve

Present the dish with a side of mustard mash or crusty bread for a satisfying meal.
