    How to Make Umami Gravy

    1. Caramelize Onions

Melt the unsalted butter in a large skillet over medium heat. Add the thinly sliced red onion, a sprinkle of granulated sugar, and a generous pinch of salt into the skillet. Cook for 10 to 12 minutes, stirring occasionally, until onions are caramelized.

    2. Prepare Roux

Stir in a pinch of dried oregano, then sprinkle in the all-purpose flour. Mix constantly for about 30 seconds to a minute, forming a roux.

    3. Add Liquids and Simmer

Whisk in the vegetable stock and whole milk. Bring to a gentle boil, reduce heat, and let it simmer for about 5 minutes until thickened.

    4. Finish with Umami Flavor

Stir in the nutritional yeast and season with salt and freshly ground black pepper to taste. Serve hot or keep aside to reheat later.
