    How to Make Elegant Mustard & Herb Sauce

    1. Prepare Cornstarch Mixture

    In a measuring cup, mix the cornstarch with the vegetable broth until it’s smooth and set it aside. This mixture will help thicken the sauce later, so make sure there are no lumps.

    2. Sauté Garlic and Thyme

    Take a small saucepan and heat it over medium heat. Add the olive oil, followed by the minced garlic and dried thyme. Sauté these ingredients for about a minute, just until the garlic becomes fragrant. Be cautious not to burn the garlic as it can turn bitter.

    3. Add Sherry and Soy Sauce

    Pour in the sherry cooking wine and soy sauce. Increase the heat to high to bring the mixture to a boil, then reduce the heat to medium and let it simmer for about 4 minutes. This step allows the alcohol in the sherry to cook off and the flavors to meld together beautifully.

    4. Thicken the Sauce

    Once the wine and soy sauce have simmered, add the vegetable broth mixture, the whole-grain Dijon mustard, lemon juice, and capers to the saucepan. Whisk everything together thoroughly to ensure that the cornstarch is evenly distributed, which will thicken the sauce as it cooks. Continue to simmer the sauce for about 3 minutes, until it becomes bubbly and thick.

    5. Cool the Sauce

    Remove the saucepan from the heat and let the sauce cool until it's just above room temperature. This allows the flavors to settle and meld together, making the sauce taste even better.
