1. Prepare the Watercress Salad
In a large bowl, combine the fresh watercress, grated Cheddar cheese, and thinly sliced cucumber. Drizzle with olive oil and lemon juice, then add a sprinkle of salt and a few grinds of black pepper. Toss gently to coat evenly.
2. Prepare the Bread with Mayonnaise
Spread a thin layer of mayonnaise on one side of each slice of whole grain bread to create a barrier to prevent sogginess.
3. Add Avocado to Bread
Arrange avocado slices on half of the bread slices, drizzle with additional lemon juice, and season with a pinch of salt.
4. Assemble the Sandwiches
Mound the watercress salad onto the bread slices with avocado, top with the remaining slices of bread, press gently, and cut each sandwich in half before serving.
