    How to Make Peanut Butter-Glazed Salmon and Green Beans

    1. Preheat Oven and Prepare Veggies

    Preheat your oven to 450 degrees. On a large rimmed baking sheet, toss the green beans, scallions, and garlic with 1 tablespoon of neutral oil, salt, and black pepper. Spread them out on the baking sheet.

    2. Make Peanut Butter Glaze

    In a small bowl, whisk together peanut butter, lemon juice, soy sauce, ginger, and toasted sesame oil. Add water to thin if necessary.

    3. Prepare and Glaze Salmon

    Rub the salmon fillets with the remaining 1/2 tablespoon of neutral oil and season with salt. Arrange them on the baking sheet with the green beans and spoon some of the peanut butter glaze over the top.

    4. Roast Salmon and Veggies

    Roast in the oven for 5 minutes. Remove and spoon the rest of the glaze over the salmon. Continue roasting for another 5 to 7 minutes, until the salmon is just opaque in the center and the green beans are tender.

    5. Garnish and Serve

    Serve the salmon and green beans, garnished with chopped roasted peanuts and a lemon wedge if desired.
