How to Make Citrus-Glazed King Salmon with Avocado-Citrus Salsa

1. Preheat the oven

Begin by preheating your oven to 375°F (190°C). This temperature ensures that the salmon cooks evenly and stays juicy.

2. Prepare the salmon

Place the salmon fillet in a small baking pan. Brush it generously with olive oil, which helps keep the fish moist and prevents it from sticking to the pan. Sprinkle the fillet with coarse kosher salt, freshly ground pepper, and a hint of ancho chile powder. These seasonings enhance the natural flavors of the salmon, giving it a slight kick and depth. Make sure the fish is glistening with oil and the seasoning is evenly spread out.

3. Roast the salmon

Roast the salmon in your preheated oven for about 18 minutes. You’ll know it’s done when the fish is almost opaque in the center. This ensures the salmon is cooked through but still tender and juicy.

4. Prepare the grapefruit

While the salmon is roasting, take your grapefruit and cut off the peel and white pith. It’s important to remove the pith because it can be bitter. Using a sharp knife, segment the grapefruit, making sure the segments are clean and free of any pith. This will enhance the sweetness and tanginess of the salsa.

5. Finish the salsa

Cut the grapefruit segments into ½-inch pieces and place them in a small bowl. Add the cubed avocado, minced jalapeño, red onion, cilantro, and fresh lime juice. Mix everything gently to combine. Season the salsa to taste with salt and pepper; this balances the flavors and adds a final touch of seasoning.

6. Serve

Once the salmon is done, cut the fillet in half and place each piece on a warmed plate. Spoon the vibrant avocado-citrus salsa generously over the top of the salmon. The freshness of the salsa complements the rich, flaky fish perfectly. Enjoy your meal!
