How to Make Minted Spring Pea Salad with Red Onion & Red Wine Vinaigrette

1. Prepare the Pea Mixture

In a medium bowl, combine the fresh peas, diced red onion, and torn mint leaves.

2. Add Vinaigrette

Pour the red wine vinaigrette over the pea mixture. Toss everything together gently but thoroughly.

3. Season the Salad

Season the salad generously with Maldon or flaky sea salt and coarsely ground black pepper.

4. Let Stand or Serve

Serve the salad immediately or let it stand for about an hour at room temperature. If refrigerating, bring back to room temperature before serving.

5. Prepare Red Wine Vinaigrette

In a small bowl, whisk together the red wine vinegar and sparkling water. Slowly add the extra virgin olive oil while continuing to whisk, creating a smooth emulsion.

Pitfalls and tips

Use Fresh Peas

Opt for fresh peas when in season, and blanch them quickly in boiling water until bright green, then shock in ice water to preserve crispness.

Balance Your Flavors

Taste and adjust the sweetness of the peas, sharpness of the red onion, freshness of mint, and acidity of the vinaigrette.

Quality of Red Wine Vinaigrette

Use high-quality red wine vinegar and extra-virgin olive oil. Consider adding a bit of Dijon mustard for complexity.

Fresh Mint is a Must

Use freshly chopped mint and fold it in just before serving to prevent wilting or overpowering flavor.

Finely Slice the Red Onion

Slice the onion thinly to complement rather than dominate, and soak in cold water to soften sharpness if desired.
