How to Make Creamy Caesar Elegance Dressing

1. Initial Blend

In a food processor fitted with a steel blade, add the room-temperature egg yolks, Dijon mustard, chopped garlic, anchovy fillets, lemon juice, a pinch of kosher salt, and a twist of black pepper. Process these ingredients until you achieve a smooth base for your dressing.

2. Emulsify

Keep the food processor running, and gradually drizzle in the olive oil through the feed tube, emulating the technique of creating mayonnaise. Continue this process until the dressing thickens to a luxurious consistency.

3. Parmesan Infusion

Add the freshly grated Parmesan cheese to the mixture and pulse the food processor just three times, ensuring the cheese is evenly distributed throughout the dressing.

4. Season to Perfection

Give the dressing a taste test and adjust the seasoning with additional salt and pepper if desired.

5. Storage

Transfer the dressing to a sealable container and refrigerate. This dressing will maintain its freshness for up to one week. Before serving, be sure to shake or stir the dressing well to re-blend the ingredients.
