1. Initial Blend
In a food processor fitted with a steel blade, add the room-temperature egg yolks, Dijon mustard, chopped garlic, anchovy fillets, lemon juice, a pinch of kosher salt, and a twist of black pepper. Process these ingredients until you achieve a smooth base for your dressing.
2. Emulsify
Keep the food processor running, and gradually drizzle in the olive oil through the feed tube, emulating the technique of creating mayonnaise. Continue this process until the dressing thickens to a luxurious consistency.
3. Parmesan Infusion
