How to Make Creamy Caesar Dressing

1. Make the Dressing

In a bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced anchovies, and microplaned garlic until the mixture is well combined and homogenous. Fold in the microplaned Parmesan cheese, and give it another good whisk. Season with black pepper to taste. Because the anchovies and Parmesan are inherently salty, only add a pinch of salt if necessary after tasting.
