How to Make Chayote Salad with Tomato and Roasted Garlic Dressing

1. Microwave Chayotes

Peel and cut the chayotes into manageable pieces, place them in a microwaveable bowl, sprinkle with 1/2 teaspoon of salt, cover with plastic wrap, and microwave for about 5 minutes until they are crisp-tender.

2. Prepare Roasted Garlic Dressing

In a blender, combine the prepared roasted garlic, roasted chiles, oil, vinegar, and a scant teaspoon of salt. Blend until smooth.

3. Combine and Dress the Salad

In a salad bowl, combine the microwaved chayotes with the diced tomato and chopped green onions. Pour approximately 1/3 cup of the roasted garlic dressing over the salad and gently toss.
