1. Cook the Rice
Bring 3 quarts of water to a boil in a large saucepan. Add the 1.5 cups of long-grain white rice and cook for about 12 minutes. Once the rice is tender, drain it using a fine-mesh strainer or colander and set it aside.
2. Prepare the Egg Mixture
While the rice cooks, whisk together the 3 large eggs, 1 teaspoon of toasted sesame oil, 0.25 teaspoon of table salt, and 0.25 teaspoon of white pepper in a bowl. Set this egg mixture aside.
3. Prepare the Garlic Butter
In a separate small bowl, combine 1 tablespoon of softened unsalted butter with 1 minced garlic clove, and set this garlic butter mixture aside.
4. Cook the Eggs
In a 12-inch nonstick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Pour in the egg mixture and cook it for about 15 seconds. The eggs should be set but still slightly runny.
5. Combine Ingredients
Add the sliced scallions and the cooked rice to the skillet with the eggs. Stir and cook together for about 3 minutes until the scallions are tender and the rice is heated through.
6. Add Soy Sauce and Mirin
Pour in 1.5 tablespoons of soy sauce and 1.5 tablespoons of mirin. Continue to stir constantly for about 2 minutes, ensuring the rice absorbs the flavors evenly.
7. Incorporate Garlic Butter
Finally, stir in the garlic butter mixture until it’s well incorporated and the garlic is fragrant. Serve the fried rice hot.
