1. Melt Butter and Add Oil
Start by melting a tablespoon of unsalted butter in a medium saucepan over medium heat. Once the butter has just melted, pour in a tablespoon of vegetable oil.
2. Sauté Onion Powder and Cilantro Stems
Stir in a tablespoon of onion powder along with the finely chopped cilantro stems and sauté this mixture for about half a minute until the onion powder becomes fragrant and the stems begin to soften.
3. Coat Rice
Introduce one cup of long-grain white rice to the saucepan, stirring it until each grain glistens with the butter and oil coating.
4. Simmer Rice
Pour in one and a half cups of water and bring it to a simmer. Then, reduce the heat to low, cover the saucepan, and let the rice cook undisturbed for 17 to 20 minutes.
5. Steam Rice
After the cooking time has elapsed, turn off the heat but leave the rice covered to steam for an additional 10 minutes.
6. Season and Serve
Finally, fold in a generous pinch of kosher salt, the vibrant cilantro leaves, slices of fresh jalapeño, and a squeeze of lime juice. Serve the cilantro rice as a delightful accompaniment to your main dish.
