    How to Make Bacon Fried Rice

    1. Prep

    Start by prepping your ingredients. Dice the onion and finely chop the garlic. Dice the bacon and thinly slice the scallion greens. Then, using wet hands, break up the day old rice into individual grains. Finally, crack and whisk the eggs.

    2. Render Bacon

    Heat a large skillet or wok over medium-high heat. Add the bacon pieces to the skillet and cook until they are crispy and browned.

    3. Cook Aromatics

    In the same skillet with the bacon fat, add the diced onion with a pinch of salt. Cook until the onion is translucent and softened, about 2-3 minutes. Add the chopped garlic to the skillet with the onions and cook with another pinch of salt until the mixture is soft and fragrant, about 1-2 minutes. Be careful not to burn the garlic.

    4. Fry Rice

    Increase the heat to high and add 1 tablespoon of avocado oil to the skillet. Add the day-old rice, breaking up any clumps with a spatula. Spread the rice out in an even layer and let it sit undisturbed for about 2 minutes to develop some crispy edges. Stir the rice and repeat this process 2 more times until the rice is heated through and aromatic.

    5. Add Egg

    Push the rice to one side of the skillet, adding a bit more oil in the space created if necessary. Pour the whisked eggs into the space and let them set for a moment before scrambling them. Cook the eggs just until they are set to avoid overcooking, then mix them with the rice.

    6. Finishing Ingredients

    Drizzle the soy sauce and sesame oil over the rice, stirring to combine all the ingredients well. Lastly, sprinkle the sliced scallion greens over the rice, giving everything a final toss to ensure it's mixed evenly and heated through.
