How to Make Simple Cheese Quiche

1. Preheat Oven

Begin by preheating your oven to 350 degrees, positioning the rack in the lower-middle to ensure even baking.

2. Prepare Custard Base

In a large bowl, whisk together the eggs, half-and-half, salt, and pepper until the mixture is smooth and well combined. This custard base is crucial as it binds the quiche together and provides that creamy texture.

3. Add Cheese and Chives

Stir in the shredded cheddar cheese and minced chives. By mixing these ingredients in now, you ensure an even distribution of cheese and chives throughout the quiche, giving every bite a burst of flavor.

4. Prepare Pie Shell

Place your warm, partially baked pie shell on a rimmed baking sheet. This step not only makes it easier to transfer the quiche in and out of the oven but also catches any potential spills.

5. Fill Pie Shell

Carefully pour the egg mixture into the pie shell, filling it to about ½ inch from the top edge. You might have a little mixture left over, which is fine. This careful filling prevents the custard from overflowing during baking, ensuring a neat and well-set quiche.

6. Bake Quiche

Bake the quiche in the preheated oven for 40 to 50 minutes. You’ll know it’s ready when the top is lightly browned, the center is set but still soft, and a knife inserted 1 inch from the edge comes out clean. This indicates that the custard has cooked through without becoming too firm or dry.

7. Cool and Serve

Once done, let the quiche cool for at least 1 hour before serving. This resting time allows the flavors to meld and the quiche to firm up, making it easier to slice and serve. You can enjoy it slightly warm or at room temperature.
