How to Make Herbed Potato Gratin

    1. Preheat Oven and Grease Dish

Preheat your oven to 400°F. Lightly grease a 9x13-inch glass or ceramic baking dish with olive oil.

    2. Prepare Potatoes and Add Liquids

Slice the potatoes thinly and layer them in the prepared dish. Pour most of the vegetable broth over the potatoes. Add the soy milk and drizzle with olive oil.

    3. Add Garlic and Nutritional Yeast

Scatter the minced garlic over the potatoes. Sprinkle 2 tablespoons of nutritional yeast over the top.

    4. Add Remaining Broth and Seasonings

Pour the remaining vegetable broth over the potatoes. Sprinkle the remaining tablespoon of nutritional yeast, dried thyme, basil, rosemary, paprika, salt, and freshly ground black pepper over the dish.

    5. Bake Covered

Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes.

    6. Bake Uncovered

Uncover the dish and bake for an additional 15 minutes until the top is golden brown.

    7. Serve

Remove from the oven and let it sit for a few minutes before serving.
