How to Make Sweet and Sour Pineapple Pork Delight

1. Preparation

Start by gathering all your ingredients and making sure the pork steaks are trimmed and ready to be cooked.

2. Cooking the Pork

Heat the vegetable oil in a large non-stick frying pan over medium-high heat. Season the pork steaks generously with salt and pepper, then lay them in the pan. Cook for 5 minutes on each side until they turn a beautiful golden color and are nearly cooked through.

3. Creating the Glaze

While the pork is searing, take a bowl and whisk together the light muscovado sugar, dark soy sauce, tomato purée, and most of the reserved pineapple juice to create a sweet and sour glaze.

4. Caramelizing Pineapple and Spicing Up

Add the pineapple rings to the pan with the pork, letting them caramelize lightly, which should take a few minutes. Sprinkle the chilli powder and Chinese five-spice powder over the pork and pineapple. Continue to fry for 1 minute, stirring occasionally, until the spices release their aromatic fragrances.

5. Finishing the Dish

Pour the sweet and sour soy mixture into the pan. Allow it to bubble and froth around the pork and pineapple, creating a beautifully thick and sticky glaze after a few minutes of cooking. Once the dish has reached the desired consistency, take it off the heat. Garnish with a sprinkle of fresh coriander leaves for a burst of color and freshness.
