    How to Make Sesame Pork Burgers with Spicy Sriracha Mayo

    1. Prepare the Patties

    In a large bowl, combine the ground pork, thinly sliced scallions, and toasted sesame oil. Season the mixture with a pinch of pink salt and a generous grind of black pepper. Form the mixture into two even patties and press your thumb into the center of each to create a small indentation.

    2. Cook the Patties

    Heat a large skillet over medium-high heat and add the ghee. Let it melt and get very hot before adding the patties. Place the patties in the skillet and cook them for about 4 minutes on each side until nicely browned and cooked through.

    3. Prepare the Sriracha Mayo

    While the burgers are cooking, mix the Sriracha sauce and mayonnaise in a small bowl to create a spicy, creamy topping.

    4. Rest and Serve

    Transfer the cooked patties to a plate and let them rest for at least 5 minutes. Top the rested burgers with the Sriracha mayonnaise and serve immediately.
