How to Make Honey Mustard Glazed Sausages with Roasted Brussels Sprouts and Potatoes

1. Preheat Oven and Prepare Sausages

Preheat your oven to 450 degrees. Score the sausages on both sides, being careful not to cut all the way through.

2. Combine Sausages, Brussels Sprouts, and Potatoes

In a large bowl, combine the sausages, Brussels sprouts, and halved potatoes. Drizzle with 2 tablespoons of extra-virgin olive oil and stir to coat.

3. Season and Arrange on Baking Sheet

Season the mixture generously with kosher salt and black pepper. Spread everything out on a heated baking sheet, placing Brussels sprouts and potatoes cut-side down. Roast in the oven for about 15 minutes.

4. Prepare Honey Mustard Glaze

While roasting, prepare the honey mustard glaze. In a small bowl, stir together honey, Dijon mustard, and mustard seeds if using.

5. Apply Glaze and Continue Roasting

After 15 minutes, drizzle the honey mustard mixture over the sausages and vegetables. Toss gently to coat. Flip the sausages and sprinkle almonds or walnuts on top if using. Roast for another 10 minutes until sausages are cooked through and vegetables are tender.

6. Final Seasoning and Serving

Remove from oven and season to taste with additional salt and pepper if needed. Transfer to a serving dish and enjoy immediately.
