1. Preheat Oven
Preheat your oven to 325 degrees, and adjust the oven rack to the middle position.
2. Prepare Glaze
In a small bowl or measuring cup, mix together the maple syrup, ground cinnamon, ground cloves, and a pinch of cayenne pepper.
3. Season Pork Loin
Pat the pork loin dry with paper towels. Season it generously with kosher salt and ground black pepper on all sides.
4. Sear Pork Loin
Heat 2 teaspoons of vegetable oil in a 12-inch oven-safe skillet over medium-high heat. Once the oil is shimmering, add the pork loin and sear it for about 3 minutes per side, until it is well browned all over.
5. Prepare Glaze in Skillet
Reduce the heat to medium and carefully pour off any excess fat from the skillet. Add the maple syrup mixture to the skillet and cook for about 30 seconds, or until the syrup starts to bubble.

Place the skillet in the preheated oven and roast the pork loin, turning it halfway through the cooking time to ensure it is evenly glazed. Roast until the internal temperature of the pork reaches 140 to 145 degrees, which should take about 35 to 55 minutes.
8. Rest and Serve
Once the pork is done, transfer it to a carving board and let it rest for 10 to 15 minutes. While the pork is resting, let the skillet cool for about 5 minutes, then pour any remaining glaze over the roast. Snip the kitchen twine and slice the pork loin into thick pieces. Serve immediately.
