1. Preparation of Garlic and Broccoli
Slice 6 cloves of garlic and cut 1 1/2 pounds of broccoli into bite-sized florets.
2. Cooking with Flavor
Melt 1/4 cup of unsalted butter in the skillet over medium heat and gently sauté the sliced garlic. When the garlic becomes fragrant, stir in the anchovy fillets and let them dissolve into the butter. Add the broccoli florets and cook until tender, stirring occasionally.
3. Bringing the Dish Together
Add 12 ounces of spaghetti, a pinch of kosher salt, and 1/2 teaspoon of red-pepper flakes to the skillet. Pour in enough water to just cover the pasta. Let it simmer, tossing occasionally with tongs, and add more water if necessary, until the spaghetti is cooked, which should take about 8-12 minutes.
Use the starchy pasta water for sauce emulsification and a silky texture.
Cook spaghetti just shy of al dente and salt the water generously.
Have all ingredients prepped before starting for smooth execution.
Use bronze-cut spaghetti for better sauce adherence and texture.
Add fresh lemon zest and juice before serving to brighten the dish.
