1. Prep Dry Ingredients
In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt.
2. Mix Wet Ingredients
In a separate medium bowl, whisk together buttermilk, mashed banana, eggs, and melted butter until smooth.
3. Combine and Rest
Pour the wet ingredients into the dry ingredients. Gently fold using the whisk, stopping when the batter is still lumpy. Let the batter rest momentarily.
4. Cook Pancakes
Preheat a medium nonstick skillet over medium heat. Melt about 1 tablespoon of butter, allowing it to bubble slightly. Spoon a scant 1/4 cup batter per pancake into the skillet. Cook until edges firm up and bubbles form in the center, roughly 2 minutes. Flip and cook for an additional 1 to 2 minutes until pancakes are cooked through. Place pancakes on a wire rack. Clean the pan if butter burns and repeat with remaining batter, adding butter as needed.
5. Serve Warm
Offer pancakes hot, with additional butter and maple syrup on the side as desired.
