How to Make Pistachio-Almond Dukka

1. Toast the Seeds

Begin by heating a large skillet over medium heat. Add the coriander seeds, cumin seeds, sesame seeds, and caraway seeds to the skillet. Stir them gently and toast for about 5 to 7 minutes. You'll know they're ready when the seeds release a fragrant aroma and the sesame seeds turn a light golden color. This toasting process enhances the natural flavors of the seeds, adding depth and complexity to your dukka.

2. Crush the Seeds

Transfer the toasted seeds to a food processor. Pulse them until the seeds are finely crushed. This step ensures that the flavors are evenly distributed throughout the dukka, creating a consistent blend.

3. Grind the Nuts

Next, add the shelled pistachios and roasted almonds to the food processor. Grind them until they are finely ground. The nuts will bring a rich, nutty flavor and a satisfying texture to the dukka.

4. Combine and Season the Dukka

In a jar or container with a lid, combine the ground seed mixture with the ground nuts. Add the cayenne pepper to the mix and stir until everything is well combined. Season your dukka with a pinch of kosher salt and freshly ground black pepper to taste. These final touches will balance the flavors and give your dukka its signature kick.

5. Store Your Dukka

Transfer the finished dukka into an airtight container, ensuring it stays fresh. You can store it at room temperature for up to 1 month. This way, you'll have this versatile spice blend ready whenever your dishes need a delightful boost.
