1. Roast Sweet Potatoes
Preheat your oven to 450 degrees Fahrenheit. Toss sweet potatoes with canola oil, salt, and pepper on a sheet pan until evenly coated. Spread in a single layer and roast for 15 to 20 minutes until tender and caramelized.
2. Wilt Spinach with Sweet Potatoes
Remove the sheet pan from the oven. Scatter baby spinach over the sweet potatoes. Drizzle with a mixture of pickled jalapeño brine and canola oil. Toss gently and return to the oven for 5 to 7 minutes until spinach is wilted.
