1. Preheat the Oven
Set your oven to 200°C (180°C fan-assisted, or gas mark 6) to preheat.
2. Patty Formation
In a large mixing bowl, combine breadcrumbs, lamb mince, beaten egg, and a generous seasoning of salt and pepper. Grate in one half of an onion and add half of the chopped mint. Thoroughly mix the ingredients before shaping the mixture into 8 equally-sized patties. Arrange these on a large, shallow roasting tray.
3. Veggie Arrangement
Distribute the remaining onion wedges around the lamb patties on the roasting tray. Scatter the potato wedges, courgette batons, and whole cherry tomatoes amongst the patties. Generously drizzle everything with olive oil and season once more with salt and pepper.
4. Roast the Dish
Place the tray into the preheated oven, baking for roughly 40 minutes. Halfway through cooking, turn the patties and vegetables to ensure even cooking. Continue roasting until the lamb is thoroughly cooked and the vegetables are tender and golden.
5. Add Feta and Mint
Remove the tray from the oven and immediately sprinkle the crumbled feta cheese and the remaining chopped mint over the hot lamb and vegetables, allowing the feta to soften slightly from the residual heat.
